Cinnamon star cookies are one of the most popular German Christmas cookies. The glaze is spread on the dough before the cinnamon star cookies are cut out. In this way the cinnamon star cookies just look perfect!
After cutting out the cinammon star cookies the remaining dough along with the glaze is kneaded with some more ground almonds and the process of making cinnamon star cookies continues until no more dough is left.
To cut out the cinnamon star cookies its best to use a Cinammon Star Buiscit Cutter that is made up of two parts and can be folded apart to remove the cinnamon stars. In this way the cinnamon star cookies do not stick to the cutter. The cinnamon star cutters are available at Amazon.
Ingredients for about two baking sheets
of cinnamon star cookies:
For the cinnamon star dough:
3 egg whites
250 g powdered sugar
1/4 bottle of bitter almond oil
400 g almonds, finely ground
1 tablespoon ground cinnamon
1/2 tablespoon lemon peel
For the Meringue Glaze:
140 g powdered sugar
1 egg white
A pinch of salt
About 200 g almonds, finely ground
Beat 3 egg whites and 250 g of powdered sugar for about 4 minutes. Then add the bitter almond oil.
Mix 400 g ground almonds, cinnamon and lemon peel in a separate bowl and fold it gently into the egg whites. Then cover the dough and let it rest for one night.
On the next day: For the meringue glaze, beat the egg white with 140 g of powdered sugar and salt for about 4 minutes.
Line baking sheets with parchment paper.
Roll out a part of the cinnamon star dough about 1 cm thick. Spread some ground almonds under and over the dough so the dough does not stick to the table and to the pastry roller.
Spread a thin layer (1 to 2 mm) of the meringue glaze on the dough. Use a special cinnamon star cutter that is made up of two parts and can be opened to remove the cookies. Place the cinnamon star cookies on the baking tray.
Knead together the remaining dough with another part of the unused dough and add some more almonds, so that the dough is not too sticky. Continue making the cinnamon star cookies until no dough is left.
Preheat the oven to 170°C and bake the cinnamon star cookies for about 15 minutes. Take the cookies out of the oven before the meringue glaze begins to brown.
